I thought I would share a recipe with you today that I posted a long time ago when I only had 3 children and they were all much smaller. Sorry about the picture quality. I was still learning about food photography, not that I am that great now.
The verdict: YUMMY!!
This pie was so good I let my kids have it with some fruit for lunch one day. From what I have read avocados have a neutral flavor that will compliment whatever they are added to. I ended up combining 2 different recipes so I could use what I already had on hand, and as usual I changed things around a bit.
Crust:
1 cup soaked walnuts, in water (30-45 min.)
1 cup almonds
5 pitted dates
1 Tablespoon maple syrup
2 Tablespoons organic, raw cacao powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch sea salt
Filling:
2-3 ripe avocados
1/2 cup raw cacao
1/2 cup rapadura
1/4 teaspoon salt
Topping: (optional)
Strawberries
Oranges
Kiwi
Really any fruit you like
To make the crust place all crust ingredients in a food processor and blend until sticky.
Press mixture into a pie plate greased with coconut oil
To make the filling place all filling ingredients in food processor and blend until smooth
pour into prepared crust.
Chill 1-2 hours before serving.
Top with your choice of fruit.
This pie is very rich and tastes a bit like a chocolate cheesecake. It is also full of healthy, raw ingredients that are actually good for you.
I can't wait to try it out on some family members who think health food is supposed to taste bad.
